How a Burned-Out Nutrition Student Became a Low-Carb Believer
I never planned to start a low-carb blog. Honestly, I didn’t even like the word “low-carb” for the longest time. It sounded restrictive. Joyless. Like the kind of thing that would make me miss out on tacos forever. (Spoiler: I still eat tacos. Just different ones.)
Back in my mid-twenties, fresh out of UT Austin with my nutrition degree, I thought I had everything figured out. I’d studied macronutrients, metabolic pathways, and every diet trend that had ever graced a magazine cover. But here’s what they don’t teach you in textbooks: how to actually feel good in your own body when you’re exhausted, stressed, and living on whatever you can grab between client appointments.
I was that person hitting the 3 p.m. wall every single day. That person who needed three cups of coffee just to function. I’d come home to my tiny Austin apartment, stare at my fridge, and feel too tired to cook anything that required more than one pan. My golden retriever Sunny would look at me like, “Are we going for that walk, or…?” And I’d feel guilty because I barely had energy for myself, let alone my dog.
The turning point came on a random Tuesday. I’d made this crustless quiche eggs, spinach, a little cheese, some leftover roasted red peppers because it was all I had. I ate it standing at my kitchen counter, and something clicked. I wasn’t bloated afterward. I didn’t crash an hour later. I felt… steady. Clear. Like someone had turned the lights back on in my brain.
That quiche changed everything. I started experimenting. Zucchini noodles with creamy avocado sauce. Cauliflower rice stir-fry that actually tasted like something I’d order at a restaurant. Lettuce-wrapped burgers that didn’t make me feel like I was punishing myself. And the more I cooked this way, the better I felt. My energy came back. My afternoon slumps disappeared. I started waking up actually awake, not in that groggy zombie state I’d accepted as normal.
That’s when I realized: if this worked for me someone who literally studied nutrition for a living it could work for other people who were struggling, too.
Food Should Make You Feel Good (Not Guilty)
Here’s my philosophy, plain and simple: eating well shouldn’t feel like punishment. I don’t believe in labeling foods as “good” or “bad.” I don’t think you need to eat perfectly to be healthy. And I definitely don’t think you should spend your whole life avoiding carbs like they’re kryptonite.
What I do believe is that when you focus on real, whole foods foods that actually nourish you your body responds. You feel better. You think clearer. You have energy to do the things you love instead of just surviving each day.
For me, low-carb eating isn’t about restriction. It’s about addition. Adding more vegetables I actually enjoy. Adding healthy fats that keep me satisfied. Adding flavor combinations that make me excited to eat, not resentful that I’m “on a diet.”
Because let’s be real: if your food doesn’t taste good, you won’t stick with it. I’ve seen it a thousand times with clients. They’ll white-knuckle their way through bland chicken and steamed broccoli for two weeks, then fall face-first into a pizza because they’re miserable. And I don’t blame them! Life’s too short for boring food.
That’s why every recipe on this site is built around one principle: flavor equals sustainability. If it doesn’t taste amazing, I’m not sharing it. Simple as that.
The Credentials (Because Trust Matters)
I graduated from the University of Texas at Austin with my B.S. in Nutrition & Dietetics, and I’m a Certified Nutrition Coach with over a decade of hands-on experience. I’ve worked one-on-one with clients navigating everything from post-pregnancy energy crashes to pre-diabetes to just wanting to feel comfortable in their jeans again.
I’ve been featured in Healthy Habits Magazine and Food & Lifestyle Today, and I had the honor of being interviewed on The Wellness Collective Podcast where we talked about sustainable eating habits that don’t require a personal chef or a trust fund. Last year, I won the Best Low-Carb Blog award at the Health & Wellness Awards, which honestly still feels surreal.
But my favorite credential? The hundreds of messages I get from readers telling me they made one of my recipes and actually enjoyed it. That they have energy to play with their kids now. That they don’t feel like they’re missing out anymore. That’s the stuff that matters.
Behind the Recipes: Life in Austin (and Why I Still Burn Toast)​

When I’m not developing recipes or working with coaching clients, you’ll find me walking Sunny through Zilker Park, usually thinking about what I’m going to make for dinner. Austin’s food scene is incredible, and it definitely influences my cooking there’s a reason you’ll find jalapeños and lime in about half my recipes.
My two nieces, Emma and Sophie (ages 7 and 9), are my most honest recipe testers. If they’ll eat it, I know it’s a winner. They’ve taught me that you can absolutely sneak vegetables into things if you make them fun enough. They’re also the reason I perfected my low-carb “pizza” recipe because watching their faces light up when they realized they could still have pizza night? That’s the whole point.
I’ll be honest with you: I still burn toast sometimes. I still have nights where I order takeout because cooking feels like too much. I’m not perfect, and I’m not trying to be. This isn’t about achieving some impossible standard of clean eating or wellness perfection. It’s about progress. It’s about making choices that serve you more often than not. It’s about building a life where healthy eating feels like the easy choice, not the hard one.
